Quick Vegetarian Food for Busy People

Crunchy breaded mushrooms which can be prepared without a deep fat fryer. They’re tasty, meaty and full of flavour. These aren’t like traditional deep fied mushrooms but are delicious none the less.

Cooking time: 10 minutes

How to do it!

  • Heat a slice of bread in the oven
  • Fry portobello mushrooms
  • Blend bread with Oregano, Paprika and Safron to make breadcrumbs
  • Toss mushrooms in the breadcrumbs and serve immediately.

Full Instructions

First put a slice of bread in the oven at maximum temperature and cook it till it’s hard but not brown. This takes around 10 minutes.

Meanwhile fry some portobello mushrooms in a little olive oil You don’t need much as the mushrooms are full of moisture.

When the bread is hard, put it in a blender with oregano, saffron and paprika to make breadcrumbs.

Toss the mushrooms in the breadcrumb mixture until they stick all over. Serve immediately
