Tasty Goats cheese salad with roasted tomatoes
A really simple one this but very effective. Goats cheese salad is good as a main meal and perfect as a starter and with the right ingredients tastes quite spectacular. The sweet glazed roast tomatoes really complement the tangy, creamy cheese and the Balsamic syrup sets the dish off perfectly. Best of all, it only takes about 10 minutes to prepare start to finish.

Overview:
- roast the tomatoes on a baking tray with balsamic vinegar and olive oil
- melt goat’s cheese in the oven
- toast seeds
- arrange on a bed of salad
- garnish with Balsamic syrup
In Detail
- Put a handful of cherry tomatoes on a baking tray. Drizzle with olive oil and balsamic vinegar and roast in a preheated oven for about 20 minutes.
- Meanwhile arrange your leaves in a bowl then go put your feet up for a few minutes.
- Make a little bowl for the cheese out of silver foil and put it in the oven for about 5 minutes till it starts to melt.
- Dry fry your seeds in a hot pan without oil until they start to turn brown. This gives them a really nutty flavour.
- Sprinkle the seeds over the leaves, arrange the goats cheese on top.
- To really bring out the flavour garnish with Balsamic Syrup. You can cook this yourself but I prefer to buy it ready made as it’s a pain to make by hand. You can get it in any good supermarket.
Choosing a cheese
For this recipe it’s best to choose a cheese with skin right round it so it can melt inside without leaking too much. I prefer a more creamy cheese for this dish.
