Spectacular Bolognaise Sauce
This veggie bolognaise sauce is a real treat. If you want a good hearty meal this is a great choice I’ve spent a lot of time getting this one just right and it’s always a reliable hit.
Cooking time: 30 minutes
In Brief
- Fry a couple of onions until translucent
- Add fresh tomatoes, or a tin if no good fresh ones are available
- Add a pinch of sugar, or a little honey.
- Add Quorn mince
- Add tomato concentrate for a really intense flavour and to reduce cooking time.
- Simmer until the flavours have melded (about 15 minutes)
- Blend a few sundried tomatoes and add
- Season with fresh basil and serve with spaghetti.
In Detail
- Chop two or three medium onions. Emma likes these chunky but cut them fine if you prefer. Fry these in a little olive oil, or a similar good oil until translucent.
- Chop some fresh tomatoes and pop them in. Alternately use a tin, both give good results. Simmer.
- Add a pinch of sugar or a little honey. The sweetness is vital as it ameliorates the acidity of the tomatoes a little.
- Chuck in some Quorn mince. The quorn has to cook in the sauce to absorb the flavour.
- If you’re in a hurry add some tomato concentrate. This will give you a thicker sauce much faster.
- Simmer the sauce until the flavours have melded together. This will take about 15 minutes. You’ll know it’s ready because it’ll taste great!
- Remove from the heat, blend a few sundried tomatoes and pop them in, add fresh basil and serve on a mound of spaghetti.
